I'd say Sonic 3 & Knuckles is my personal favourite, but I also quite enjoy Sonic CD, Sonic Mania, Sonic Adventure 1, Sonic Generations and Sonic Advance 3.
As for my least favourite, it's definitely Sonic 4 Episode 1 because it's the only Sonic game that I've found actively boring.

But actually, Sonic Adventure and Sonic Mania are my favourites of the franchise. Sonic 3&K is also cool but I hate blue spheres.
Also, Sonic Forces was overhated, it was a mediocre game. Sonic Colors is overrated, it's acts other than the first and sometimes the second ones are literally 90% 2D with a slippery character who is meant for speed, not slow average platforming

I actually grew up with Sonic Adventure Deluxe and Sonic Advance 2. It was a lot of fun! Especially because I used the Tiny Chao Garden with it quite a lot.
(In case you didn't know. Sonic Adventure Deluxe is the Japanese name of Sonic Adventure DX: Directors Cut)

3d is Sonic Adventure, probably the best way Sonic was handled in terms of momentum, level design and speed
